Today is National Potato Day

Potatoes have been a popular part of diets around the world for centuries. They are an inexpensive and versatile veggie.

Did you know that more than 45 billion pounds of potatoes are harvested in the U.S. each year?
They are used to make a variety of different potato dishes. Potato salad and a baked potato are at the top of the list. My favorite is a good bowl of hot potato soup, but only if the weather is cold.

Potatoes are not only tasty—they’re good for you! Potatoes are loaded with vitamins and minerals. They contain high levels of important vitamins and minerals, such as vitamin C, potassium, and iron.
