Today is National Sponge Cake Day!
Sponge cake is a light cake enjoyed as a perfect summer dessert. Sponge cakes are not leavened with yeast; they are often enjoyed during Passover, made with matzo meal instead of wheat flour. Sponge cake is very versatile cake and can be variously flavored and filled.
Traditionally there are only 3 ingredients: eggs, sugar and flour. Technique and volume are needed to make a perfect sponge cake. There are different varieties including Victoria Sponge Cake. The dessert is named after Queen Victoria. She enjoyed having a slice of it with her afternoon tea.
My favorite way to eat sponge cake is in a Puerto Rican dessert called Brazo Gitano. The sponge cake is still flexible after baked and is spread with Guava jelly then rolled, sprinkled with powdered sugar or coconut flakes and OMGosh it’s the best thing ever!!! I haven’t had it for a while. It’s kind of hard to find in the States.
