I had lost sight of that lately with Thanksgiving and Christmas around the corner. So, I am back on track now.
I am really tired of eating meat and think I will be vegetarian until Christmas dinner.
All the items in this recipe come from the extended Ralph’s ad (12/14 – 12/25).

Asian Citrus Salad with Apple Turnovers – 4 servings
2 bags – Dole or Fresh Selections Salad Blends – $1.99 ea.
(Be on the look out for a Blinkie – Read it carefully, there are exclusions)
1 Bottle – Tropicana Orange Juice or Trop50 Juice 59-64 oz – $2.99
1 can – Pillsbury Cinnamon, Crescent Rolls or Grands Biscuits – 1.99

1- Whole Pineapple – .99 lb.
2 – Navel Oranges – .99lb.
4 – Rome apples
1 – 16oz bad of shelled walnuts – $5.99
Wash lettuce, apples and oranges. Peel oranges and section, each salad will get ½ and orange. Cut and core pineapple. Cut pineapple into bite size pieces. Peel apples and cut into pieces small enough to fit into a folded biscuit. Place lettuce, oranges and pineapple in refrigerator to chill.
Place apples into a microwave safe glass bowl, pour a small amount of water at the bottom, sprinkle the apples with a small amount of sugar or any sweetener you prefer to taste. Place plastic wrap over the bowl and microwave until apples are firm but soft (time is dependant on your microwave).
When apples are done let them cool for at least 15 minutes. DO NOT place hot apples into the biscuit.
While apples are cooling start on the dressing for the salad. Pour 3/4 c. of orange juice into a sauce pan, add 1 tsp cornstarch (add more if you like a thick dressing), 1 tsp of soy sauce, 1 ½ tbsp of honey or to taste. Simmer until slightly thickened. Let cool.
Roughly chop or leave whole ¼ c. walnuts. Place nuts on parchment lined baking sheet. Toast at 325 for 5-10 minutes (time is dependant on your oven). Let cool.
Place lettuce, pineapple and oranges in a large bowl and mix together. Slow add and mix the orange dressing. Lettuce should be slight covered with dressing not drowning. Serve and sprinkle walnuts on top.
Use 1 8 ct can of Grand biscuits. Separate each biscuit in half. Roll each ½ biscuit into a 3 inch round. Placed 1 heaping teaspoon of cooled apples on ½ of the biscuit. Fold the empty half over the apples and press the side together to completely seal the turnover. Place in 325 oven for 8-10 minutes (time is dependant on your oven).
