Traditionally ravioli is pasta stuffed with a variety of cheeses. Besides cheese, ravioli is often stuffed with beef, veal, crab, eggplant, sausage and spinach. Seasoning used on ravioli includes garlic, basil pesto, breadcrumbs and black pepper and are served with butter or olive oil, sauce or in soups.
The first mention of ravioli was in the 14th century. It’s noted that Francesco di Marco was the first person to write about ravioli in his personal letters.
