May 11 – Eat What You Want Day

 
Today is Eat What You Want Day.
 
 
My research doesn’t show who created this day or who came up with it. I can only assume that there are so many people dieting that they need just one day of guilt free eating.

It’s not detrimental to cheat once in a while, you shouldn’t deprive yourself. Deprivation is the death of a diet. Making healthy choices while you’re on your diet. There is an abundance of information online that can help anyone who is willing to look.

Eating whatever you want one day out of the year isn’t going to make a big difference in your diet. Actually, if your plateauing it might be good to trick your body into thinking you’re not on your diet.

My new favorite indulgence snack is baked rutabaga chips. I’m not going to lie, they kind of taste like potato chips, but I season them to make up for the real potato chip flavor. The trick is to make sure they are sliced thin enough and they are baked on a sheet with airflow. I use a cooling rack over the top of a baking sheet, works great.

Enjoy today. Go overboard if you feel the need, but remember to get back on track tomorrow.

National Potato Chip Day

Potato chips are thin slices of potato that are deep fried or baked until crispy. 1.2 billion pounds of potato chips are eaten each year in the United States? So, it’s no surprise potato chips are the great American snack food.

Potato chips were created in Saratoga Springs in 1853 by an Irish chef named George Crum.

 

Chef Crum was so frustrated with a customer who kept sending back his fried potato’s complaining that they were too thick and soggy. So Chef, in defiance, decided to slice the potatoes so thin and fry them so they could not be eaten with a fork.

The customer was so please with the fried potato that Chef Crum added them to the menu.

To celebrate this day I decided to share my favorite recipe that includes potato chips. It’s addictive so be careful.

Potato Chip Crusted Chicken

Ingredients

1/2 cup crushed potato chips
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/2 cup French’s Fried Onions
4 skinless, boneless chicken breast halves (cut in half -lengthwise)
egg whites from 2 eggs

Directions

In a large resealable plastic bag, combine the potato chips, parsley, salt, paprika, French’s Fired Onion’s and garlic powder. Brush chicken with egg white; add chicken to the crumb mixture and shake to coat. Place in an ungreased 11-in. x 7-in. x 2-in. baking dish. For crispy chicken it’s best to place on a rack over a the baking dish. Place in oven at 350 for 35 to 40 minutes or until chicken juices run clear.

National Cheese Doodle Day

I love this crunchy yellow-orange cheesy snack.

What are Cheese Doodles? They are a snack made from corn meal, baked and coated with cheddar cheese.

It’s unclear if Flakall Corporation or Elmer Candy corporation created these scrumptious snacks.

My research leans more towards Morrie Yohai, a WW II Marine pilot and philanthropist. After returning home from the war Yohai took over his father’s snack-food business in the Bronx. Looking for another type of snack food the Company found out about a machine that would extrude cornmeal and it would almost popped like popcorn. Wanting a healthier snack they were baked not fried.

Today is a celebration of the Wise Foods Cheese Doodle. They have been around since the 50’s and are one of the companies most popular brands.

Cheetos are Frito Lay’s version of the Cheese Doodle.

February Is National Snack Food Month

Super Bowls are probably the biggest snack event of the year.  

It seems every year I forget something and have to run around trying to figure out what to get at the store.  

Below are a few recipes you can throw together in no time and your guests will love them.    

Shrimp Dip:  This is one of my favorites. I always have these ingredients on hand just in case.  

1 pkg of cream cheese
1 can of DEVEINED shrimp
Salt and Pepper to taste    

Place cream cheese in a glass bowl, drain shrimp (keep juice). Combine drained shrimp and cream cheese. Add small amounts of the shrimp juice as you go to loosen up dip. Dip should NOT be runny. It should be the consistency of a sour cream dip. To serve use any cut up veggies or any chips.    

Cheesy Chili Dip:  

1 pkg of Velveeta 2 to 3 cans of chili (no beans)
2 small cans of diced green chilies
Salt and Pepper to taste    

Cube Velveeta. Combine 2 cans of chili (no beans), cubed Velveeta and 1 can of green chilies in a crock pot. Set on low and stir every 10 minutes. Check after 1 hour. I like mine with lots of chili. If you feel you need more chili add the 3rd can of chili (no beans) and the 2nd can of green chilies. To serve keep in the crock pot and serve with tortilla chips.  

Deviled Eggs: The amount of eggs is dependent on the amount of guests you’ll have  

2 Doz. Eggs
2 Tbsp brown mustard
1 small can of Salmon
Salt to taste
Paprika  

Boil eggs the night before you put them together. Peel and cut eggs in half length wise. Place the yoke in a glass bowl. Combine yokes and brown mustard. Start with ¼ can of the Salmon, add more as needed. Make sure these are made at least 2 hours before your guests arrive. Refrigerate. Sprinkle eggs with paprika when removed from refrigerator. Eggs should be placed in a stay cool container when left.
